If you aren't wanting to use all kinds of special effects, you might like GoldWave, too. It capably records and edits waveforms while offering all of the basics for making a good voice file.
Personally, I prefer Adobe Audition over Audacity, but the price is a bit prohibitive for some. However, if you aren't wanting to lay multiple tracks, binaurals or subliminals, a program like GoldWave (http://goldwave.com) is probably all you need.
