Question about Sent Box for PMs

Do they only show up in the Sent box after they're opened by the recipient? I've sent a some PMs, but not all of them have appeared as "sent."

You're correct. Outbox holds private messages you've sent - waiting to be read by the recipient. You can edit these.

Sent holds private messages you've sent - which have been read by the recipient.
